any type of fish will do. miso base... fresh from the tub. add sugar, shoyu (soysauce), ginger and some green onions (scallions) soak the fish fillets in the mixture... and then...ensuring there is a miso "outercoating" slowly fry with a little sesame seed oil.
any fish would do. salmon and black cod (butterfish) are the known favourites.
